The annual contest for “Foods Cooked with Honey” is held during the Summer Meeting.

2019

Carla Helm: Honey Salsa Dip-16 ounces of cream cheese
-1 cup of your favorite salsa
-1/4 cup of honey

Mix honey and softened cream cheese together with a fork. Add salsa and stir together. Serve with corn chips.

Stir again before serving. It is better after having been made for at least a day. Keep in the refrigerator.

2018

Charlieann Carpenter: Double Chocolate Cherry Cookies-1 cup butter, softened
-¾ cup honey
-1 teaspoon vanilla extract
-2 large eggs
-2 ½ cups all-purpose flour
-2/3 cup unsweetened cocoa powder
-¼ teaspoon baking soda
-¼ teaspoon salt
-2 cups mini semi-sweet chocolate chips
-1 ½ cups cherries, pitted and diced

Preheat oven to 325 degrees F. Chop cherries and set aside. Cream together butter, honey, and vanilla together with an electric mixer. Add eggs in one at a time.

In medium bowl, combine flour, cocoa powder, baking soda, and salt. Add dry ingredients into the mixer. Fold in chocolate chips and cherries.

Scoop a rounded tablespoon full onto parchment lined baking sheets. Bake for 12-15 minutes.

2017

Charlieann Carpenter: Banana Pineapple Cake- 3 cups all-purpose flour
- 1 cup white sugar
- 1 cup honey
- 1 tsp salt
- 1 tsp baking soda
- 3 eggs, slightly beaten
- 2 cups of mashed bananas
- 1 cup oil
-1 ½ tsp vanilla
- ¾ cup chopped pecans
- One 8 ¼ can crushed pineapple, undrained

In a mixing bowl,stir together dry ingredients except for the pecans and make a well in the center. Combine the rest of ingredients along with the pecans and add to the dry ingredients. Mix until well moistened. Pour batter into a greased and floured baking pan. Bake at 350° F for 65 to 70 min.Cool in pan 15 min. Remove and cool on wire rack. Sprinkle with confectioners sugar or drizzle with a powdered sugar glaze.

2016

David Arnold: Applesauce Honey Banana Bread- 3 overripe bananas (mashed)
- 2 eggs,whisked
- ½ cup unsweetened applesauce
- ¾ cup honey
- 1 tsp baking soda
- ¼ tsp salt
- 1 cup whole wheat flour
- 1 cup regular white flour
- ½ cup walnut pieces
- ½ tsp cinnamon

Preheat oven to 325° F. Slightly grease a 9'x 5' loaf pan. In large bowl, sift flour, baking soda, salt and cinnamon. In aseparate bowl mix applesauce and honey. Stir in bananas and whisked eggs until blended. Stir in banana mixture until just moistened. Add nuts if desired. Pour batter into loaf pan and bake in preheated oven for 60 to 65 minutes (until toothpick comes out clean). Let cool for 10 minutes then turn out onto wire rack to cool.

2015

Melinda Miller: Honey Dressing- 1 cup vegetable oil
- 1/2 cup catsup
- 1/3 cup vinegar
- 1/3 cup honey
- 1 tsp paprika
- 1 tsp grated onion
- 1 clove garlic, halved

Add all ingredients to a blender and mix well. Use as needed.

2014

Melinda Miller: Candied Pecans- 2 cups pecans
- 2 tbsp melted butter
- 1/3 cup honey
- 1 tsp cinnamon

Preheat oven to 400 degrees. In a medium bowl, combine melted butter and honey. Add cinnamon, stir to combine. Mix in pecans, stir well and make sure pecans are coated. Bake for 5-6 minutes in preheated oven. Be sure not to burn them.
